This is like the carrot salad you used to buy at the deli counter in the grocery . . . You know, back in the days before you found out you had Celiac Disease, or were allergic to dairy and/or nuts. I don’t particularly care for it with nuts; however, if you like them and are not allergic to them, then the addition of a quarter-cup of chopped walnuts or pecans is certainly an option. I make our salad with Spectrum Light Canola Mayo, which is vegan (therefore no eggs or dairy) and gluten-free.

My preference for raisins are organic sultana (or golden) raisins. Originating in Turkey, I believe in the U.S. they are made from Thompson Grapes. If find them to be more subtle in flavor than their darker sisters.

Carrot Deli-Salad, Gluten-Free, Dairy-Free/Vegan
The recipe
Serves six
- 3/4 cup of fresh organic pineapple, peeled, sliced, and diced
- 1/4 cup Spectrum Light Canola Mayo
- 2 good-sized organic carrots (about 1 1/2 cups), shredded
- 1/3 cup of organic sultana raisins
Put the mayo in a bowl. Stir in the pineapple. The add the carrots and raisins and blend well.
